Soaking Ingredients
Main Ingredient is soaked dry fruits and cashew nut soaked in sweet red wine and rum I soaked this dry fruits and cashew nut in Sweet red wine and rum before 1 and half month
½ cup tutti fruti
½ cup raisins
½ cup dried cranberry
¼ cup dried apricot
¼ cup dried dates
¼ cup of dried plum
½ cup of cashew nut
¾ cup of rum
½ cup of sweet red wine
Preparation
In a bowl add all dry fruits and cashew nut. Then add rum and sweet red wine Combine it very well and keep in an air tight container All nuts and dry fruits should be chopped very small .so that it will be soaked nicely You have to soak this at least before one week. Here I soaked it before 1 and half months. You can soak this before 6 months also. More time you soak, more it will be tasty
Caramel Ingredients
1 cup of sugar
½ cup + 1Tbsp Hot water
Preparation
For making caramel we need to heat a deep pan and cook the sugar and a tbsp of water When the sugar start melts. Don’t use spatula for mixing sugar. You have to swirl the pan around When the sugar color has changed to a l darker brown color, turn off heat. Immediately, pour half a cup of hot water into the caramel and mix it well. You have to pour little by little Don’t use cold water.
Cake Ingredients
3 cups all-purpose flour
2.5 tsps baking powder
4 eggs
2 teaspoons vanilla essence
1 cup butter
2 cups powdered sugar
zest of one orange
1 tsp cinnamon powder
1/2 tsp clove
1/2 tsp cardamom powder
1/2 tsp ginger powder
Preparation
Mix together all-purpose flour & baking powder Then need to separate egg yolks from the whites. Then Whisk together the egg yolks and vanilla and keep aside Next Beat together 1 cup butter, 1 orange zest and 2 cups of powder sugar till creamy Then add egg yolk vanilla mixture into that Next add all spices into the caramel Add this mixture into the batter Then add all purpose flour and baking powder into the batter little by little and combine it well Then strain the dry fruits and nuts from rum and wine Add this into the batter and gently mix it well. Don’t use beater or whisk Then whisk egg white till it become forms Then add this to the cake batter and gentle mix it well Then pour the batter into the greesed cake pan.here am using 2 9Inch rounf cake pan Decorate it with cashew nut on the top of the batter Bake the cake for about 45-60 minute or till the end become brown. Insert a toothpick into cake .if it is comes out clean ypour is done Cool cake in the cake pan and then transfer into wire rack and allow to cool completely
